With so many new flavor combinations and exquisitely decorated classics, Cake Confidence will definitely be top of every baker&#8217;s Santa list this year.<\/p>\n<p>Explaining the philosophy behind the book, Mandy says: &#8220;I\u2019ve loved teaching cake classes and have enjoyed meeting so many kindred cake-loving friends through our shared desire to create the best-tasting and best-looking cakes. For a great portion of my classes, I demonstrate how to prep, stack, fill, crumb coat, final coat, add the drip, decorate, and transfer the perfect cake. I want you to have that same cake confidence they leave my class with and show you how to avoid the most common cake-decorating mistakes that tend to happen at a beginner level. So a 6-inch taped to an 8-inch, or an 8-inch taped to a 10-inch, etc.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/cake-geek.com\/wp-content\/uploads\/2019\/10\/how-to-buttercream-a-cake-tutorial-step-1.jpg\" alt=\"how to buttercream a cake tutorial step 1\" width=\"615\" height=\"490\" \/><\/p>\n<p>Place a cardboard cake round the same size as your cake in the center of the larger cardboard round and press firmly to stick.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/cake-geek.com\/wp-content\/uploads\/2019\/10\/how-to-buttercream-a-cake-tutorial-step-2.jpg\" alt=\"how to buttercream a cake tutorial step 2\" width=\"625\" height=\"536\" \/><\/p>\n<p>Add on a touch of buttercream in the center of the smaller cardboard cake round to act as \u201cglue\u201d for the bottom cake round. Using an offset icing spatula, spread out the buttercream in a nice even layer. (Don\u2019t spread it too thin, though; just a little bit.)<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cake-geek.com\/wp-content\/uploads\/2019\/10\/how-to-buttercream-a-cake-tutorial-step-3.jpg\" alt=\"how to buttercream a cake tutorial step 3\" width=\"623\" height=\"544\" \/><\/p>\n<pre>Place the first cake round in the center of the small cardboard round. Make sure there\u2019s even spacing from all the edges.<\/pre>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cake-geek.com\/wp-content\/uploads\/2019\/10\/cake-decorating-for-beginners-step-4.jpg\" alt=\"cake decorating for beginners step 4\" width=\"624\" height=\"545\" \/><\/p>\n<p>Pipe on an even layer of buttercream.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cake-geek.com\/wp-content\/uploads\/2019\/10\/cake-decorating-for-beginners-step-5.jpg\" alt=\"cake decorating for beginners step 5\" width=\"623\" height=\"538\" \/><\/p>\n<p>Spread the buttercream nice and even with the offset icing spatula.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cake-geek.com\/wp-content\/uploads\/2019\/10\/cake-decorating-for-beginners-step-6.jpg\" alt=\"cake decorating for beginners step 6\" width=\"617\" height=\"542\" \/><\/p>\n<p>Place the next cake layer on top. Look at the cake at eye level to make sure it\u2019s straight and even.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cake-geek.com\/wp-content\/uploads\/2019\/10\/cake-decorating-for-beginners-step-7.jpg\" alt=\"cake decorating for beginners step 7\" width=\"623\" height=\"546\" \/><\/p>\n<p>If you are planning on adding a filling, spread a thin layer of buttercream on the cake round.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cake-geek.com\/wp-content\/uploads\/2019\/10\/newbie-cake-decorating-tutorial-step-9.jpg\" alt=\"newbie cake decorating tutorial step 9\" width=\"623\" height=\"543\" \/><\/p>\n<p>Next, pipe a dam around the outside rim of the cake layer. This will keep the soft filling inside without leaking.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cake-geek.com\/wp-content\/uploads\/2019\/10\/newbie-cake-decorating-tutorial-step-10.jpg\" alt=\"newbie cake decorating tutorial step 10\" width=\"624\" height=\"542\" \/><\/p>\n<p>Add about \u00bd cup of filling to your cake. A little filling goes a long way. Be sure to have a strong dam around it, and go easy.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cake-geek.com\/wp-content\/uploads\/2019\/10\/newbie-cake-decorating-tutorial-pic-11.jpg\" alt=\"newbie cake decorating tutorial pic 11\" width=\"622\" height=\"542\" \/><\/p>\n<p>Add on top cake layer. Look at it again at eye level to make sure everything is straight.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cake-geek.com\/wp-content\/uploads\/2019\/10\/how-to-buttercream-a-cake-tutorial-pic-12.jpg\" alt=\"how to buttercream a cake tutorial pic 12\" width=\"624\" height=\"520\" \/><\/p>\n<p>Fill in the middle layer areas with more buttercream.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cake-geek.com\/wp-content\/uploads\/2019\/10\/how-to-buttercream-a-cake-tutorial-pic-13.jpg\" alt=\"how to buttercream a cake tutorial pic 13\" width=\"625\" height=\"541\" \/><\/p>\n<p>Add a layer of buttercream to the top of the cake using an offset icing spatula.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cake-geek.com\/wp-content\/uploads\/2019\/10\/how-to-buttercream-a-cake-tutorial-pic-14.jpg\" alt=\"how to buttercream a cake tutorial pic 14\" width=\"623\" height=\"546\" \/><\/p>\n<p>Add a thin layer of buttercream to the sides, starting from the bottom, using a cake knife.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cake-geek.com\/wp-content\/uploads\/2019\/10\/how-to-crumb-coat-a-cake-tutorial-pic-15.jpg\" alt=\"how to crumb coat a cake tutorial pic 15\" width=\"623\" height=\"544\" \/><\/p>\n<p>Crumb coat the entire cake with the cake knife.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cake-geek.com\/wp-content\/uploads\/2019\/10\/how-to-crumb-coat-a-cake-tutorial-pic-16.jpg\" alt=\"how to crumb coat a cake tutorial pic 16\" width=\"621\" height=\"542\" \/><\/p>\n<p>Smooth out the crumb coat with a cake scraper, angling it at about 45 degrees from the cake.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cake-geek.com\/wp-content\/uploads\/2019\/10\/how-to-crumb-coat-a-cake-tutorial-pic-17.jpg\" alt=\"how to crumb coat a cake tutorial pic 17\" width=\"625\" height=\"544\" \/><\/p>\n<p>Pull in the edges of the rim of the cake from the rim to the middle with an offset icing spatula. Freeze for 5 minutes.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cake-geek.com\/wp-content\/uploads\/2019\/10\/how-to-crumb-coat-a-cake-tutorial-18.jpg\" alt=\"how to crumb coat a cake tutorial 18\" width=\"625\" height=\"542\" \/><\/p>\n<p>Place a cardboard round on top of the chilled cake and make sure it\u2019s straight.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cake-geek.com\/wp-content\/uploads\/2019\/10\/cake-ganaching-tutorial-19.jpg\" alt=\"cake ganaching tutorial 19\" width=\"622\" height=\"546\" \/><\/p>\n<p>Place one hand on top and apply buttercream to the top half of the cake to hold the cardboard in place.<\/p>\n<div dir=\"ltr\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cake-geek.com\/wp-content\/uploads\/2019\/10\/cake-ganaching-tutorial-20.jpg\" alt=\"cake ganaching tutorial 20\" width=\"624\" height=\"545\" \/><\/div>\n<div dir=\"ltr\"><\/div>\n<div dir=\"ltr\">Coat the entire cake in buttercream using a cake knife.<\/div>\n<div dir=\"ltr\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cake-geek.com\/wp-content\/uploads\/2019\/10\/cake-ganaching-tutorial-21.jpg\" alt=\"cake ganaching tutorial 21\" width=\"626\" height=\"478\" \/><\/div>\n<div dir=\"ltr\"><\/div>\n<div dir=\"ltr\">Gently press a cake scraper slightly against the top and bottom cake board to smooth out the sides of the cake. Fill in any holes and repeat.<\/div>\n<div dir=\"ltr\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cake-geek.com\/wp-content\/uploads\/2019\/10\/cake-ganaching-tutorial-22.jpg\" alt=\"cake ganaching tutorial 22\" width=\"622\" height=\"544\" \/><\/div>\n<div dir=\"ltr\">Freeze for 10\u201320 minutes. Use a sharp knife to gently slice off the cardboard cake round.<\/div>\n<div dir=\"ltr\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cake-geek.com\/wp-content\/uploads\/2019\/10\/cake-ganaching-tutorial-23.jpg\" alt=\"cake ganaching tutorial 23\" width=\"621\" height=\"547\" \/><\/div>\n<div dir=\"ltr\">Completely remove the cardboard round and discard.<\/div>\n<div dir=\"ltr\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cake-geek.com\/wp-content\/uploads\/2019\/10\/cake-ganaching-tutorial-24.jpg\" alt=\"cake ganaching tutorial 24\" width=\"625\" height=\"534\" \/><\/div>\n<div dir=\"ltr\">Using an offset icing spatula, fill in any spaces on the top of the cake with more buttercream.<\/div>\n<div dir=\"ltr\"><\/div>\n<div dir=\"ltr\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cake-geek.com\/wp-content\/uploads\/2019\/10\/cake-ganaching-tutorial-25.jpg\" alt=\"cake ganaching tutorial 25\" width=\"623\" height=\"535\" \/><\/div>\n<div dir=\"ltr\"><\/div>\n<div dir=\"ltr\">Pull in the edges carefully with the offset icing spatula, cleaning the knife each time.
