Although a yule log is based on a <\/span><span lang=\"EN-GB\">rolled chocolate sponge, I\u2019m stacking this one. And <\/span><span lang=\"EN-GB\">since I\u2019m breaking the rules, I\u2019m also adding peanut <\/span><span lang=\"EN-GB\">butter to the sponge and the frosting. Of course, feel <\/span><span lang=\"EN-GB\">free to use your favorite chocolate cake recipe for <\/span><span lang=\"EN-GB\">this idea \u2013 I\u2019m just a rebel at heart and I think this <\/span><span lang=\"EN-GB\">cake is pretty damn tasty.<\/span>&#8221;<\/p>\n<h4>Tree Spirit Cake Tutorial: Ingredients<\/h4>\n<p><span lang=\"EN-GB\">Serves 8<\/span><\/p>\n<ul>\n<li><span lang=\"EN-GB\">210g [1 3\/4 cups] plain <\/span><span lang=\"EN-GB\">[all-purpose] flour<\/span><\/li>\n<li><span lang=\"EN-GB\">420g [2 cups] caster <\/span><span lang=\"EN-GB\">[granulated] sugar<\/span><\/li>\n<li><span lang=\"EN-GB\">90g [3\/4 cup] cocoa powder<\/span><\/li>\n<li><span lang=\"EN-GB\">2 tsp bicarbonate of soda <\/span><span lang=\"EN-GB\">[baking soda]<\/span><\/li>\n<li><span lang=\"EN-GB\">1 tsp baking powder<\/span><\/li>\n<li><span lang=\"EN-GB\">1 tsp salt<\/span><\/li>\n<li><span lang=\"EN-GB\">2 tbsp smooth peanut butter<\/span><\/li>\n<li><span lang=\"EN-GB\">120ml [1\/2 cup] vegetable oil<\/span><\/li>\n<li><span lang=\"EN-GB\">2 large eggs<\/span><\/li>\n<li><span lang=\"EN-GB\">250ml [1 cup] buttermilk<\/span><\/li>\n<li><span lang=\"EN-GB\">1 tsp vanilla extract<\/span><\/li>\n<li><span lang=\"EN-GB\">1 1\/2 tsp instant coffee granules<\/span><\/li>\n<li><span lang=\"EN-GB\">\u00a0250ml [1 cup] very hot water<\/span><\/li>\n<\/ul>\n<p><span lang=\"EN-GB\">For the frosting:<\/span><\/p>\n<ul>\n<li><span lang=\"EN-GB\">250g [1 cup] smooth peanut <\/span><span lang=\"EN-GB\">butter<\/span><\/li>\n<li><span lang=\"EN-GB\">225g [8oz] cream cheese<\/span><\/li>\n<li><span lang=\"EN-GB\">1 tsp vanilla extract<\/span><\/li>\n<li><span lang=\"EN-GB\">1\/4 tsp salt<\/span><\/li>\n<li><span lang=\"EN-GB\">375g [3 cups] icing <\/span><span lang=\"EN-GB\">[confectioners\u2019] sugar<\/span><\/li>\n<li><span lang=\"EN-GB\">about 2 tbsp milk<\/span><\/li>\n<\/ul>\n<p><span lang=\"EN-GB\">To decorate:<\/span><\/p>\n<ul>\n<li><span lang=\"EN-GB\">1kg [2lb 4oz] dark modelling <\/span><span lang=\"EN-GB\">chocolate or dark brown <\/span><span lang=\"EN-GB\">fondant icing<\/span><\/li>\n<li><span lang=\"EN-GB\">brown food colour<\/span><\/li>\n<li><span lang=\"EN-GB\">black powder food colour<\/span><\/li>\n<\/ul>\n<h4>Tree Spirit Cake Tutorial: Instructions<\/h4>\n<p><span lang=\"EN-GB\">The day before you want to serve the cake, preheat the <\/span><span lang=\"EN-GB\">oven to 160\u00b0C fan [350\u00b0F\/Gas mark 4] and oil 4 x 10-cm <\/span><span lang=\"EN-GB\">[4-in] round cake tins.<\/span><\/p>\n<p><span lang=\"EN-GB\">Sift the flour, sugar, cocoa, bicarbonate of soda, baking <\/span><span lang=\"EN-GB\">powder and salt together in a large bowl and set aside.<\/span><\/p>\n<p><span lang=\"EN-GB\">Cream the peanut butter and oil together in an electric <\/span><span lang=\"EN-GB\">mixer on medium speed. Add the eggs, one by one, <\/span><span lang=\"EN-GB\">beating well between each addition. Add the buttermilk <\/span><span lang=\"EN-GB\">and vanilla and continue mixing.<\/span><\/p>\n<p><span lang=\"EN-GB\">Turn the mixer to low and add all the dry ingredients.<\/span><\/p>\n<p><span lang=\"EN-GB\">Dissolve the coffee granules in the hot water and add <\/span><span lang=\"EN-GB\">to the mixture.<\/span><\/p>\n<p><span lang=\"EN-GB\">Divide the batter between the prepared tins and bake <\/span><span lang=\"EN-GB\">for 30\u201335 minutes until a skewer stuck into the middle <\/span><span lang=\"EN-GB\">comes out clean. Leave to cool in the tins for 5 minutes <\/span><span lang=\"EN-GB\">before transferring to a wire rack. Let the cakes cool <\/span><span lang=\"EN-GB\">completely before frosting.<\/span><\/p>\n<p><span lang=\"EN-GB\">For the frosting, combine the peanut butter, cream <\/span><span lang=\"EN-GB\">cheese, vanilla and salt together in an electric mixer.<\/span><\/p>\n<p><span lang=\"EN-GB\">Add the icing sugar, alternating with the milk until you <\/span><span lang=\"EN-GB\">get a spreadable consistency. You may not need to use <\/span><span lang=\"EN-GB\">all the milk.<\/span><\/p>\n<p><span lang=\"EN-GB\">Stack the cakes with a layer of the frosting between each <\/span><span lang=\"EN-GB\">cake. Now crumb coat the stack by coating the cake with <\/span><span lang=\"EN-GB\">a layer of frosting and smoothing the side and top with <\/span><span lang=\"EN-GB\">a bench scraper. Secure with a couple of long wooden <\/span><span lang=\"EN-GB\">dowels pushed down through the layers and refrigerate <\/span><span lang=\"EN-GB\">overnight to let it set.<\/span><\/p>\n<p><span lang=\"EN-GB\">To decorate, roll the modelling chocolate and shape into <\/span><span lang=\"EN-GB\">ropes of different sizes and lengths. This step is quite <\/span><span lang=\"EN-GB\">tedious but it\u2019s worth it!<\/span><\/p>\n<p><span lang=\"EN-GB\">Score the rope pieces with the back of a knife, or use <\/span><span lang=\"EN-GB\">modelling tools if you have them, to imitate tree bark.<\/span><\/p>\n<p><span lang=\"EN-GB\">Stick the pieces onto the cake using frosting. On the <\/span><span lang=\"EN-GB\">front half of the cake, make a dent in the eye and mouth <\/span><span lang=\"EN-GB\">areas (see photo), or create your own expression, such as <\/span><span lang=\"EN-GB\">a Jack O\u2019 Lantern or a scared ghost.<\/span><\/p>\n<p><span lang=\"EN-GB\">Create the arms and base of the tree using more <\/span><span lang=\"EN-GB\">modelling chocolate and blending it into the tree.<\/span><\/p>\n<p><span lang=\"EN-GB\">Mould some around the eyes and cheeks for definition.<\/span><\/p>\n<p><span lang=\"EN-GB\">Finish the look by painting some brown food colour in <\/span><span lang=\"EN-GB\">the cracks and brushing black powder colour around the <\/span><span lang=\"EN-GB\">inside of the eyes and mouth to create depth.<\/span><\/p>\n<p>Extracted with permission from <a href=\"https:\/\/amzn.to\/3ok8Ett\" target=\"_blank\" rel=\"noopener\"><em>The Wicked Baker<\/em><\/a> by Helena Garcia (Quadrille, STG\u00a312.99).
